1/4 red onion, chopped
1/2 bell pepper, chopped
1lb ground beef
1 T worcestershire sauce
1 tsp salt
1 T MexiCajun Seasoning
3 T breadcrumbs
1 egg
1/4 cup Abita Amber
ketchup (optional)
In a large bowl, season ground meat with salt and MexiCajun. Add onion, pepper and breadcrumbs and knead together with hands. Work in worcestershire, egg and beer, kneading until everything is nicely incorporated.
Mold into a loaf, pressing and packing so meat keeps the shape.
Drizzle just about a tsp olive oil into bottom of casserole dish. Transfer meat loaf to dish. Sprinkle extra MexiCajun on top and then coat with ketchup.
Bake at 400° for about 50 minutes. Using a meat thermometer, test center. When internal temperature reaches 150-160° it is done.
