Kale Quiche
1 prepared pie crust
2 T butter
1 small yellow onion, chopped
1 T garlic, minced
2 cups fresh kale, roughly chopped
2-3 T green onion, chopped
4 eggs
3/4 cup milk
3/4 cup half & half
1 1/2 tsp MexiCajun Seasoning
pinch of salt
1/2 cup cheddar cheese, shredded
Preheat oven to 350°. Press prepared pie crust into a pie plate. Add pie weights (or dry beans will work just as well) and bake for 10 minutes. Set aside to cool and remove pie weights.
Melt butter in skillet and sauté onions until they begin to turn clear. Add garlic and continue to cook until it just starts to turn brown. Add kale, green onions, and 1/2 tsp MexiCajun seasoning. Stir well and cook until kale wilts down. Transfer to pie crust. Top with cheese.
In a large mixing bowl, whisk together eggs, milk, half & half, salt, and seasoning. Pour over cheese and kale mixture in pie plate.
Bake for 25 minutes or until a knife inserted in the middle comes out clean.
